Baked Apples

I love shortcuts, but only when they are of the healthy, natural variety.  As a result I was a little skeptical when today’s recipe required me to cook my “baked” apples in the microwave.  In the spirit of proper recipe testing I decided to ignore my urge to put the mixture in the oven and follow the recipe as it was written.  Thankfully, I was pleasantly surprised!  Although I would recommend tweaking the recipe just slightly if you are scaling it for fewer portions, it has amazing potential.  The best news of all?  Each serving has only 125 calories.

Baked Apples
Yields: 8 Servings

2 cup Dried cranberries
1 1/4 cup Walnuts (coarsely chopped)
1 cup Brown sugar (packed)
1 cup Water
2 teaspoon Ground cinnamon
6 Gala Apples (cored and chopped, about 3 pounds)

1. Combine all ingredients in a large microwave-safe dish. Microwave at high 20 minutes or until apples are soft, stirring occasionally.

Kate’s Tips:

I would recommend increasing to one apple per person/serving, otherwise the walnut/cranberry to apple ratio is too low in my opinion.  Also, be sure to watch how long you are cooking it in the microwave very carefully.  For 4 servings or less, I would recommend increasing the amount of water slightly and decreasing the cooking time.  For example, 12 minutes would have been sufficient for our 2 servings.  Anything longer produces a mixture that is much too “candied”.
