Sweet and Spicy Citrus Tilapia

I love fish and its health benefits cannot be denied.  Fish is low in fat and cholesterol and high in beneficial DHA omega 3 oils; things all of us could benefit from.  I recommend trying to incorporate at least one serving of fish into your diet each week; add more if possible!  There are so many wonderful recipes so don’t be intimidated to try new types of fish.  I know not everyone is as fortunate to live somewhere you can get fresh seafood year round, but supermarkets often carry frozen varieties that are just as good.  Explore what they have to offer; it doesn’t hurt to try!

Today’s recipe for one comes just in time for those of you looking to try a great fish dish!  I chose this recipe because I had almost all the ingredients on hand and knew it would involve little prep work.  A definite plus when my son is involved!  The combination of sweet and spicy was the perfect complement to the subtle flavor of tilapia.  I was able to prepare dinner in less than 10 minutes and then sat down to enjoy some quality time with my son before we both sat down to eat.  He’s a wonderful dinner date (until he starts throwing food…)

Sweet and Spicy Citrus Tilapia
Yields: 1 Serving

1 6-ounce Tilapia fillets
Cooking spray
2 tablespoons Orange juice
3/4 tablespoon Fresh lime juice
1/4 tablespoon Brown sugar
1/4 tablespoon Olive oil
1/2 teaspoon Low-sodium soy sauce
Pinch Salt
Pinch Ground cumin
Pinch Black pepper
Pinch Ground red pepper
1 Garlic clove (crushed)
1/8 teaspoon Paprika

1. Place fish in Ziploc bag. Combine orange juice and next 9 ingredients (through garlic); pour into bag with fish. Let stand 15 minutes.
2. Preheat broiler.  Place fish and marinade in shallow roasting pan coated with cooking spray.
3. Sprinkle fish with paprika; broil 12-15 minutes or until desired degree of doneness.  If any sauce remains in roasting pan, drizzle over fish .
